Apple Fritters with Pistachio Semifreddo Recipe by Chef David Benstock

APPLE FRITTERS WITH PISTACHIO SEMIFREDDO
Serves 4
semifreddo
- 2 cups heavy whipping cream
- 6 egg whites
- 1 cup sugar
- 1 1/2 cups pistachios
- 1 tablespoon vanilla

- 2 eggs
- 1 tablespoon sugar
- 1 cup milk
- 1 1/4 cup 00 flour, such as Caputo
- 2 apples, peeled, cored, and sliced into 1/4 -inch thick slices
- 1/2 cup powdered sugar
- Oil for frying
PREPARATION:
Pistachio semifreddo
Whip egg whites until stiff peaks form. Repeat process with cream in a separate bowl. In a food processor, grind up pistachios with sugar and vanilla. Gently fold all ingredients together in a large mixing bowl, cover and freeze for at least 6 hours.
Apple fritters
Mix eggs, sugar, milk and flour together in a large mixing bowl. Soak apples in this mixture for at least an hour.
To cook, mix powdered sugar and 1 cup of flour together. Dredge soaked apple slices in this mixture. In a large, deep skillet, heat oil over medium high heat until it reaches 350 degrees. Shallow fry slices until golden brown on both sides.
Top with semifreddo and serve.
