3 Ways to Hype Up Your Hot Dog on Game Day

Link, Tallahassee's artisanal sausage links and hot dog eatery, shared three of their game-day favorites to spice up your tailgate.

Mild Italian Hot Dog

Herb Aioli

SERVES 8 TO 10 PEOPLE
  • 1 cup peeled garlic cloves
  • 12 ounces neutral oil, depending on size of baking dish
  • 1 pint mayonnaise
  • 2 teaspoons lemon juice
  • Chopped oregano
  • Chopped parsley 
  • Chopped scallions
  • Chopped basil 
  • Salt and pepper, to taste

PREPARATION: Place garlic cloves on an oven-safe dish. Pour oil to cover the garlic, plus an extra 3–4 ounces. Cover dish with aluminum foil and bake at 325 degrees for 45–60 minutes or until garlic is tender and oil is fragrant. Let cool. Separate garlic from oil and mash cloves into a puree. Combine roasted garlic, mayonnaise, lemon juice, herbs, salt and pepper. Stir until smooth.

Hot Dog

Serves 1
  • 1 mild Italian sausage
  • 1 onion
  • 1 bell pepper 
  • 1 rustic Italian bun or baguette
  • 2 ounces herb aioli
  • Grated Parmesan cheese

PREPARATION: Roast sausage over a hot grill or grill pan until deep brown. Thinly slice onion and pepper and sear on a skillet for about 5–7 minutes. Spread herb aioli on insides of bun, or baguette cut to size. Place sausage inside and top with griddled onions, peppers and Parmesan.

Creole Aioli

SERVES 8 TO 10 PEOPLE
  • 1 cup peeled garlic cloves 
  • 12 ounces neutral oil, depending on size of dish
  • 1 pint mayonnaise 
  • 2 teaspoons lemon juice
  • Tony Chachere’s Original Creole Seasoning, to taste 

PREPARATION: Place garlic cloves on an oven-safe dish Pour enough oil to completely cover the garlic plus an extra 3–4 ounces. Cover dish with aluminum foil and bake at 325º F for 45–60 minutes or until garlic is tender and oil is fragrant. Let cool. Separate garlic from oil and mash cloves to create a puree. Combine roasted garlic, mayonnaise, lemon juice and Tony Chachere’s seasoning to taste.

Andouille Hot Dog

SERVES 1
  • Link Andouille Sausage
  • 1 Onion
  • 1 Celery stalk
  • 1 Green bell pepper 
  • 1 Rustic Italian bun
  • Creole aioli
  • Shaved scallions

PREPARATION: Roast sausage over a hot grill or grill-pan until a deep brown color for about 3 minutes on each side. Thinly slice onion, celery and pepper and sear on a skillet for 5–7 minutes. Thinly slice scallions. Spread Creole aioli on insides of bun. Place sausage inside and top with griddled vegetables and scallions.

SERVES 1
  • 1 Classic Hotdog Bun
  • 1 Vegan hotdog of choice
  • 1 tablespoon yellow mustard
  • 1 tablespoon ketchup
  • 2 tablespoon dill relish
  • 2 tablespoon diced onion

PREPARATION: Roast sausage over a hot grill or grill-pan until a deep brown color for about 3 minutes each side. Place vegan hotdog inside bun, and top with mustard, ketchup, relish and diced onion.
