Cinnamon Toast Crunch Maple Cookies

Growing up, I’d devour a bowl of Cinnamon Toast Crunch before heading to school, and it still hits the nostalgia button for me. These cookies bring together that childhood crunch with maple and pecans for the ultimate fall treat. It’s like a warm hug from your favorite season in cookie form!
COOKIES:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ¼ cup maple syrup
- 1 large egg
- 2 teaspoons vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 cup chopped pecans
- 1 cup crushed Cinnamon Toast Crunch cereal (plus extra for topping)
CREAM CHEESE FROSTING:
- 8 ounces cream cheese, softened
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Preparation: Preheat oven to 350°F and line a baking sheet with parchment paper. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Mix in the maple syrup, egg, and vanilla extract until combined. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture. Fold in the chopped pecans and crushed Cinnamon Toast Crunch. Scoop the dough into 1.5-inch balls and place them onto the prepared baking sheet. Slightly flatten them with your hand. Top each cookie with a few extra crushed Cinnamon Toast Crunch pieces for added crunch. Bake for 10-12 minutes or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. While the cookies are cooling, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, and mix until creamy. Once the cookies are completely cooled, spread a generous layer of cream cheese frosting on top. Sprinkle with extra crushed Cinnamon Toast Crunch cereal.
