Ube Bae

MAKES 1 MOCKTAIL
  • 2 ounces Seedlip Spice 94
  • 1 ½ ounces ube almond orgeat
  • 1 ½ ounces pineapple juice
  • ½ ounces lime juice
  • Mint (for garnish)
  • Dehydrated pineapple soaked in angostura bitters (for garnish)

Preparation: Add all the liquid ingredients together in a shaker with ice. Shake well and strain into a pearl diver glass over pebble ice. Garnish with mint and a slice of dehydrated pineapple.

For the Ube Almond Orgeat

  • 500 grams coconut milk
  • 500 grams sugar
  • 8 grams butterfly ube extract

Preparation: Stir milk and sugar over low heat until sugar is dissolved. Whisk in butterfly extract.
