Ube Bae
MAKES 1 MOCKTAIL
- 2 ounces Seedlip Spice 94
- 1 ½ ounces ube almond orgeat
- 1 ½ ounces pineapple juice
- ½ ounces lime juice
- Mint (for garnish)
- Dehydrated pineapple soaked in angostura bitters (for garnish)
Preparation: Add all the liquid ingredients together in a shaker with ice. Shake well and strain into a pearl diver glass over pebble ice. Garnish with mint and a slice of dehydrated pineapple.
For the Ube Almond Orgeat
- 500 grams coconut milk
- 500 grams sugar
- 8 grams butterfly ube extract
Preparation: Stir milk and sugar over low heat until sugar is dissolved. Whisk in butterfly extract.
